Roasted Garlic Hummus

Ingredients Roasted Garlic Hummus
Serves 6-8

1 head garlic
1 can (16 oz) garbanzo beans
1 Tablespoon garbanzo bean liquid
1 Tablespoon tahini
1 Tablespoon lemon juice
extra virgin olive oil
salt
cayenne pepper

Directions

  • roast the garlic
    • preheat oven to 400 degrees
    • cut the top 1/4″ off the head of garlic, exposing the cloves
    • drizzle with olive oil
    • wrap in foil and bake for 45-60 minutes
    • when complete, cloves should be slightly browned and soft
  • reserve 1 Tablespoon garbanzo bean liquid
  • drain and rinse the garbanzo beans
  • place garbanzo beans, tahini, lemon juice and liquid in a food processor, process until mixture begins to form a paste (at this stage it is likely that the mixture will form a dough like ball, this is okay)
  • add roasted garlic cloves and 2 Tablespoons of olive oil
  • process until garlic is fully incorporated
  • salt to taste (will really help bring out the garlic flavor)
  • process hummus while adding olive oil until you’ve reached a desired consistency
  • plate with a well of olive oil and a dusting of cayenne pepper
  • serve with toasted pita or naan

Results

Hummus is an incredibly simple dish to prepare and is hard to “mess up”, the most common mistake I’ve experienced myself is adding too much tahini. This can be compensated for by adding additional garbanzo beans (Hey, you can never have enough hummus).

Similar to Chili, the roasted garlic flavor in this particular recipe cannot be fully appreciated until the Hummus sits for a night.

Cheap and easy to prepare, endless variations, a staple in mediterranean and middle eastern cuisine, you can’t go wrong.

Variations

The variations are too numerous to even try and cover them all, some of the more popular ingredients you may want to try incorporating into your hummus are sun dried tomatoes and roasted red pepper.
