Guacamole
Ingredients
Serves 4
2 Hass Avocados
1 small onion
1 plum tomato
1 serrano chili
1 lime
fresh cilantro
salt

Directions
- chop onions (you’ll want approximately 1/2 cup)
- chop tomato and gently squeeze out excess liquid (you’ll want approximately 1/4 cup)
- cut serrano chili length wise, remove seeds and finely chop
- prepare avocados
- halve avocado
- remove pit
- with avocado still in the skin, cut into the fruit horizontally and then vertically, creating a chessboard like pattern
- with a spoon, scoop out avocado from skin (avocado should spoon out roughly in small cubes)
- in a bowl, mix avocado, onions, tomatoes, chili and juice from one lime, stir together gently until lime juice is incorporated into mixture
- add fresh cilantro and salt to taste
- serve with tortilla chips
Results
Guacamole is extremely simple to prepare. I would suggest you have all of your ingredients prepared and ready to go prior to cutting the avocado as it browns very quickly, the lime juice helps prevent this so toss the avocado cubes in lime juice as you cut it up. If you have leftovers, to prevent discoloration use plastic wrap pressed against the guacamole so no air is left between the guacamole and plastic wrap.
Variations
There are not too many variations on your traditional guacamole. Lemon juice can be used in place of lime if you prefer. Also, you can give your guacamole a little extra kick with cayenne pepper, garlic, red onions or hot sauce.
